Bourgogne Pinot Noir Côtes d’Auxerre

To the eye, a rich color, purple then taking on a deeper ruby with age. On the nose, the bouquet opens with a basket of small red and black fruits (strawberry, cherry, blackcurrant, blueberry), evolving on cooked prune, on peppery, animal and undergrowth nuances, on moss and on the mushroom. Very lively in the mouth, structured, the back supple and round. Its tannins and the fruit hold a tête-à-tête where the chewiness balances the impulse of the secondary aromas. Volume, flesh.

Food and Wine Pairings: Red Burgundies have an elegant, fine personality and a fluid, light structure on the palate. We therefore associate them with rather delicate and moderately aromatic dishes, such as vegetables in salads, meat pies, poultry or even a stew. Their delicacy even makes them the ideal partner for fish lovers. Their natural elegance predisposes them to roast veal, even tabbouleh and cooked cheeses, such as gouda.
