Food and Wine Pairings: As an aperitif of course, for the insolent charm of its beautiful lively appearance, with biscuits, peanuts and olives. But its versatile character, associated with its liveliness, its roundness, its smoothness and its aromatic complexity, makes it a very easy wine to combine, because it is very well balanced: poultry and veal in creamy sauce revere it in winter. In summer, grilled fish, cold antipasti and ratatouilles, complex salads with onions cannot resist it. It rolls them in its fruity aromatic strength. Even sushi and goat cheese have adopted it.
